It can be used very well and lime, gives it a special scent. Beat the butter at room temperature with the sugar, lemon peel and then gradually add the lemon juice, yolks and flour. Stir gently followed by milk. Whisk the egg whites. Line a bowl with butter and place it in another larger bowl that will go in the oven. Put hot water in the pan to reach the middle of the pudding bowl and bake for 45-55 minutes until it browns on top and remains soft in the middle.
Serve cold the next day.
