We cover it and let it rest for 3 hours. After that we spread a sheet of about 4 mm thick and shape with the shapes of cookies. Place them in trays lined with baking paper and place in the oven heated to 180 degrees for 25-35 minutes.
Meanwhile, from two egg whites, beat the foam well with 200 gr. powdered sugar until the composition becomes glassy. Add 2 tablespoons of vinegar and continue beating well (vinegar also helps to melt the sugar better and to dry the icing)
Remove the gingerbread from the oven and with a silicone brush grease with the icing obtained, place them on the trays and let them dry. We place them in containers with lids, so they soften better.

Wash the lemons well and cut them into slices. Then cut the ginger root into slices.
Add the lemon, ginger and honey slices in a layered jar. Put 2-3 slices of lemon, a few pieces of ginger and then a few tablespoons of honey. Repeat until you use all the ingredients and fill the jar.
