Knead all the ingredients for the sheets and divide the dough into 3 equal parts. We spread the sheets on the back of a tray, on baking paper, put them in the oven for about 10 minutes and leave them to cool.
We put in a bowl 100 ml of milk from the total amount. Add the starch and 80 g caster sugar and mix until smooth. We boil the rest of the milk, together with the butter, powdered sugar and chocolate. When the butter and chocolate have melted, add the starch mixture and mix until it thickens. Add the coconut and mix until everything is incorporated. Let the cream cool.
Put the first sheet, 1/2 of the cream, place the drained cherries well, put the second sheet, the rest of the cream, drained cherries and the last sheet.
Powder the cake with powdered sugar and keep it cold for a few hours.
