Impressions from Arjana's pantry 9 Assorted pickles

Of all the pickles, this salad, ready to match, is ready for the winter. it's my favorite. I like the sweet and sour juice, I like the combination of gogonele, onion, cabbage and carrots, and it seems to me that, in this way, everything being finely chopped, the flavors of the different components intertwine. A bowl of pickles and a portion of potato paprika & # 8230 Hmmm! What goodness!

Ingredients for 10 jars of 800 ml:

2 kilograms of cucumbers
1.5 kilograms of donuts or peppers
1.5 kilograms of cabbage
1 kilogram gogonele
1 kilogram of onions
2 & # 8211 3 carrots
90 grams of salt
400 grams of sugar
600 milliliters of vinegar
1 teaspoon metabisulphite tip (Hungarian preservative)
1 teaspoon grated salicylate

Put on the cabbage grater (or on the food processor) all the ingredients, except the donuts, which are cut as for salad. Alternatively, place in a large bowl, adding sugar, salt, vinegar and preservative. Mix well, leave until the next day, stirring a few more times. They are put in jars, pressing insistently, to be covered with the juice left.

Impressions from Arjana's pantry 8 Pumpkin Chutney

After the pumpkin jam, presented not long ago, here is an interesting combination of exotic fruits and pumpkin: chutney.
By the way, do you know where these consistent sauces come from and how they are actually used?
The country of origin is India, and the name, in Hindu, is chantni. In India, the sauce is eaten fresh, in various variants, combining vegetables and fruits, with a sweet-sour note and using turmeric, coriander, black mustard, sugar, vinegar and salt to flavor it. It accompanies the different variants of curry, the traditional food.
The English took over both the name and the preparation, which, however, they turned into a kind of preserve, which is kept and sold in glass jars. The different types of chutney go well with roast meat.

I think a lot of steaks will be eaten at Arjana, after the amount of chutney put in for the winter.

Ingredients for 7 jars of 350 ml:

2.5 kilograms of pumpkin cake, cut into cubes
3 larger oranges
2 lemons
600 milliliters of apple cider vinegar
500 grams of sugar

Peel a squash, grate it and squeeze the juice. Sprinkle generously with salt, stir and leave until the next day. Wash the pumpkin and drain. Peel an orange, grate it and slice it. Put all the ingredients in a saucepan, bring to the boil, then lower the heat and leave without a lid for about 40 minutes. Pour into sterilized jars.

The final product has, as I said, a sweet-sour taste, and the pumpkin pieces continue to be crispy.
