Frito pie is a mainstay at Texas high school football games, at county fairs and even in school cafeterias. Making it is quite simple: Slice open a small bag of Fritos, ladle in a heaping spoonful of beef chili and top with chopped onions, a generous sprinkling of cheddar cheese and, if you’re feeling decadent, a dollop of sour cream.


  • 4 cups Fritos corn chips
  • 2 1/2 cups chili con carne
  • 1/2 cup chopped onion
  • 2 cups shredded Cheddar cheese
  • 1/4 cup jalapeño slices, optional

Put the Fritos corn chips in the bottom of a small baking pan spread the chili evenly over the top. Sprinkle with onions, cheddar, and jalapeños if desired.

Bake at 350oF for 5 minutes or until the cheese is melted. Use a spatula to transfer servings to a plate or bowl.

Variations

Original Frito Pie: Open a 1.75-ounce bag of Fritos corn chips. Into the bag, pour 1/2 cup chili, 1/4 cup shredded Cheddar, 1 tablespoon chopped onion, and a couple of jalapeño slices. Eat it out of the bag.

Taco Style: Top each serving with 1/2 cup shredded iceberg lettuce and a 1/4 cup chopped tomatoes.

New Mexican Frito Pie: Substitute Chile Colorado con Puerco for the chili con carne and top each serving with a dollop of sour cream and some chopped green onions.


Frito Chili Pie

My good, basic chili recipe and one of my favorite ways to use it!

cloves garlic, minced (optional)

can (12-14 ounce size) tomato sauce

can (10-ounce) Ro-tel (diced tomatoes and chilies)

chili powder (more to taste)

can (14-ounce) kidney beans, drained and rinsed

can (14-ounce) pinto beans, drained and rinsed

masa (corn flour) or regular corn meal

Individual bags of Fritos

Grated sharp cheddar cheese

Brown ground chuck with garlic in a pot over medium-high heat. Add tomato sauce, Rotel, salt, oregano, cumin, and chili powder. Cover and reduce heat to low. Simmer for 30 minutes.

Add drained and rinsed beans. Stir to combine, then cover and simmer for another 20 minutes.

Mix masa with water, then add to the chili. Stir to combine and simmer for a final 10 to 15 minutes. Set aside.

Serve by slicing the Frito bags open lengthwise. Pile in chili and cheese, and diced onion if using. Serve immediately with plastic forks. A crowd-pleaser!

Sour cream is my favorite, but lettuce, black olives, avocado, and tomatoes make a great choice as well. We are a huge fan of anything with Mexican flavors, so it should come as no surprise that this is a hit at our house. Mexican Skillet Potatoes are on the menu at least monthly!


How to Make Walking Frito Pie

Because everything is already done for you, all you have to do to make this walking Frito pie is heat up whatever canned chili you like and set out everything else!

Firstly, let’s talk canned chili. If you are not a chili fan, you might not even know about the beans vs. no beans debate! Here in Texas, most people give a big, fat NO to beans in their chili. Me, on the other hand, I like the flavor that beans add (please don’t take away my Texan card)! So, when you are shopping around for chili, look to see whether or not there are beans.

How To Make Frito Pie Recipe

Spread a layer of Fritos in a baking dish, covering the bottom. Pour in your chili or taco meat, cover with shredded cheese, and broil to perfection! Serve in a “frito boat” or individual bowls after topping with chopped onion, a dollop of sour cream, sliced jalapeno, and either avocado or guacamole. Yum!


Preparation

For the brisket and black bean chili:

Over medium heat, warm a large, heavy pot (such as a Dutch oven). Add the bacon and cook until rendered and crispy. Add the garlic and cook until aromatic. Add white onion and cook until tender.

Add to the pot all remaining ingredients except the black beans and brisket and cook for 20-30 minutes to develop the flavors.

Finally add the diced brisket and black beans and simmer for 15 minutes to marry the flavors. Keep warm until ready to serve.

For the Frito pie:

Take the individual bags of Fritos and gently crunch the contents. Cut the side of the bag open and fill with 3/4 cup chili, 1 tablespoon sour cream, sliced jalapeños and Mexican cheese blend. Garnish with fresh cilantro and serve.

1 Chili seasoning package (I use 2 tblsp of chili powder, 1tblsp ground cumin, and 1 tsp garlic powder)

16 ounces of tomato sauce (or I like 1 can sauce and 1 14.5 oz can diced)

1 good tablespoon smooth creamy peanut butter (NEVER use chunky PB)

(Note: Keep 2 cups water on hand to help you reach the right consistency you prefer)

Brown meat in a 2 quart sauce pan. Add onions after meat is browned. Add seasonings, water, and can tomatoes or tomato sauce. Bring to low boil, stirring often. Add peanut butter.

Turn down chili temp to low heat setting and dissolve(melt) peanut butter.

Salt and pepper to taste. Good now, even better tomorrow.

Make individual Frito pies, served in the opened Frito bags and use plastic spoons. Easy clean-up!
