This burger was created as an ode to Baltimore Ravens fans for Super Bowl XLVII. A Maryland crabcake topped with a caper aioli, shredded romaine, and Old Bay frizzled onions is the perfect way to treat a Maryland fan right.
For the caper aioli
- 4 Cups mayonnaise
- 2 Cups halved and chopped scallion whites
- 2 Cups chopped cornichons
- 1 Cup capers, rinsed and minced
- 1/2 Cup lemon juice
- Cayenne, to taste
- Salt, to taste
For the crabcakes
- 1 Pound lump crabmeat
- 2 Tablespoons ground panko, plus extra for breading
- 2 Tablespoons mayo
- 1 Tablespoon Old Bay
- 1 Teaspoon lemon juice
- 2 Tablespoons minced celery
- 2 Tablespoons minced fennel
- 1 Tablespoon minced garlic
- 1 Tablespoon sliced cilantro
- 1 Tablespoon sliced tarragon
- 2 Tablespoons chopped parsley
- 6 eggs, beaten
- 2 Cups flour
For the frizzled onions and the burger
- 3 Spanish onions, thickly sliced
- 2 Cups milk
- 1/2 Cup garlic powder
- 1/2 Cup onion powder
- 2 Tablespoons cayenne
- 1/2 Cup Spanish paprika
- 1/4 Cup salt
- 1 Cup all-purpose flour
- Vegetable oil, for frying
- 5 hamburger buns, toasted

To make the topping, gently fold the cheese into the leftover filling and set aside.
Mix together the beef, Old Bay, and bread crumbs and form into 4 equal sized patties. Heat a skillet, griddle, or grill pan over medium high heat. Cook each patty 3-5 minutes on each side until cooked through or a meat thermometer reads 125.
Preheat your broiler on high.
Spread a portion of the topping on each burger and place under the broiler and broil until the topping forms a light golden brown crust. Serve on a kaiser roll spread with a little mayo or tarter sauce and garnished with some crisp lettuce and a meaty tomato slice.

Chesapeake Garlic Parmesan Wings
Parmesan cheese never tasted so good on a chicken wing before. These Parmesan Chicken Wings are perfect as the star of the meal, or served as an appetizer. Either way they?re always a crowd pleaser!

- For the Wings:
- 2-4 pounds of chicken wings
- Salt and pepper to taste
- For the Garlic Parmesan Sauce:
- 1 cup of Texas Pete hot sauce or your favorite hot sauce
- 1 stick of butter
- 1/4 cup raw honey
- 2 Tablespoons minced garlic
- 2 Tablespoons Parmesan, grated
- 1 teaspoon old bay seasoning
Preheat pellet grill at 350 degrees F.
Cook your chicken wings in pellet smoker at 350 degrees F. until they reach an internal temperature of 145 degrees F.
While wings are cooking, make the sauce. In a sauce pan, heat sauce ingredients except butter over medium heat. Add butter and slowly stir until butter is completely melted. Continue stirring until butter and sauce are evenly mixed. Set aside.
Prep a Dutch oven with oil for frying. Heat oil to 350 degrees F.
Remove chicken from the smoker and put chicken in your fry basket. Fry chicken until they reach an internal temperature of 165 degrees F.
Place wings on a paper towel lined baking sheet and let cook for 5-10 minutes.
Chesapeake Bay Burgers
These mini turkey burgers pack a big wallop of flavor with the addition of Old Bay® Seasoning.
1 (16-ounce) package PERDUE® Fresh Lean Ground Turkey (or Fresh Ground Chicken)
1/3 cup finely chopped onion
1/4 cup finely crushed saltine crackers (about 5 crackers)
2 teaspoons OLD BAY® Seasoning (or seafood seasoning)
8 mini rolls
Cocktail or tarter sauce (optional)
- If grilling, grease grill. Preheat grill or broiler.
- In medium bowl, combine turkey, onion, crackers and Old Bay® Seasoning until blended. Shape into 8 mini burgers.
- Grill or broil, turning occasionally, 10 minutes or until meat thermometer inserted in center registers 170°F.
- Serve burgers, if desired, with cocktail or tartar sauce on rolls.
Makes 4 (2 mini burger) servings.
