  • 2 tbsp olive oil
  • 500g lean minced beef
  • 1 large onion, finely chopped
  • 1 carrot, peeled and finely chopped
  • 2 celery sticks, finely chopped
  • 4 garlic cloves, crushed
  • 400g can chopped tomatoes
  • 450g jar or carton tomato passata
  • good pinch of dried oregano, or to taste
  • 400g spaghetti
  • grated Parmesan cheese, to serve

  1. Heat a wok or large, deep frying pan with the olive oil. Crumble the beef into the pan and stir-fry over a high heat for 2 minutes to break up the meat and brown it.
  2. Add the onion, carrot, celery and garlic. Stir over a medium heat for 1 minute, then add the chopped tomatoes and the passata. Stir well, then add the oregano and seasoning. Cook over a medium heat so that the sauce boils gently, stirring occasionally, for 15 minutes or until thick.
  3. While the sauce is cooking, cook the spaghetti in a pan of salted boiling water for 10 minutes, or according to the pack instructions, until tender with a bite at the centre. Drain and turn into a warmed serving bowl.
  4. Taste the sauce and adjust the seasoning, then pour over the hot pasta. Toss gently and serve immediately with grated Parmesan cheese.

Swap

For a richer sauce, replace 100g of the minced beef with 100g chicken or turkey livers, roughly chopped. Stir in a small carton of single cream after the sauce has been cooking for 5 minutes.

Cool unused sauce quickly then chill and store in the fridge for up to two days or pour into a suitable freezerproof container and freeze for up to one month. To use, thaw, reheat and simmer for 10 minutes.

Quick Spaghetti Bolognese recipe - Recipes

Peel carrot till nothing left and chop peelings in to squares, cut pepper into chunks and slice mushrooms. When the onions are brown add in the carrot, pepper and mushrooms.

When all is soft (usually takes 5 minutes on medium heat), add in the mince. MAKE SURE ALL MINCE IS COMPLETELY BROWN TILL MOVE ONTO NEXT STEP. Put on a pan of water, will take long time to boil.

Add in the chopped tomatoes and tomato puree, stir together. Then crumble 1 Oxo cube into the bolognese, add 1 Oxo cube into very little water (in a jug) and stir with a fork till is all crumbled and is smooth, add to mixture.

After that, crush the garlic and add, then add in the herbs for flavour. Turn down the heat and let cook for 20 minutes.

When 5 minutes to go, add the pasta to a pan of boiling water and cook till soft (to know when ready either try it, of if have tiles in your kitchen, throw the pasta at it, if it sticks it is ready). If doing this for family/dinner party better too cook much before the meal, the flavours will come together longer and give a better taste to the dinner.

  • Tomato and basil pasta sauce (You can use Classico or Barilla - 1 jar (24 ounces)
  • Garlic cloves - 2 nos. (Minced)
  • Green bell pepper - 1/2 cup. (Chopped)
  • Sweet onion - 1/2 cup. (Chopped)
  • Sweet Italian sausage - 1 pound. (Casings need to be removed)
  • Olive oil - 1 tablespoon.
  • Shaved parmesan cheese (Optional)

How does it compare to a traditional Italian Spaghetti Bolognese?

Traditional spaghetti bolognese often uses beef and pork mince and pancetta. You might also find it with finely chopped celery (that go in with the carrots) and milk in it too. A traditional version is often also cooked for a lot longer (2-3 hours). These are all great additions, and cooking for a long time will always ensure a rich and tasty sauce. I do it this way occasionally, but I do my fast, easy version most of the time.

I add Worcestershire sauce, tomato puree and a crumbled stock cube for extra flavour and richness (remember, we're only simmering for 15 minutes or so, so these additions make up for the reduced cooking time), and I also add a little sugar to balance the acidity of the tomatoes. I also add mushrooms, because I love them.

The secret to the best EASY Spaghetti Bolognese? Chicken bouillon and quality jarred marinara sauce (like Barilla or Classico).

  • Chicken Bouillon: The bouillon replaces the chicken broth which doesn’t have time to reduce in this quick and easy version and it infuses the sauce with intense flavor (replacing the salty pork), just as if it had been simmering and reducing all day.
  • Jarred marinara sauce: Jarred marinara sauce, on the other hand, has been simmering all day – just not in your kitchen. A quality jarred sauce replaces much of the work (and time) for you by using quality vine-ripened tomatoes and aromatic herbs.
  • I have found that when I have used just tomato sauce or crushed tomatoes alone to create my homemade sauce, it needs the hours of simmering to develop flavor and not just taste like acidic-y tomatoes, whereas, using jarred marinara in combination with other ingredients creates the full body taste and texture you expect from classic Spaghetti Bolognese.

  • Crushed Tomatoes: In addition to the marinara, we add crushed tomatoes (often be called crushed tomatoes in puree) which add the fresh tomato puree texture and flavor. We balance the acidity with a little sugar. The amount of sugar will depend on the actual acidity of the tomatoes and personal preference.
  • I recommend the brands San Marzano, Cento and Muir Glen. San Marzano tomatoes are usually sold “whole” so you will want to pour them into a bowl and crush them with your hands first.
  • Garlic: Garlic is essential to flavorful Bolognese. Feel free to use more garlic depending on your garlic love. For extra lazy day Spaghetti Bolognese, you can substitute fresh garlic with 1 ½ teaspoons garlic, more or less to taste.
  • Seasonings: Even though jarred Marinara Sauces comes seasoned, we diluted the flavor with the addition of crushed tomatoes. We want to pump up the overall flavor again with the addition of dried basil, dried parsley, dried oregano, dried thyme, and ¼ teaspoon red pepper flakes.
  • I think the red pepper adds just the right kick to the Spaghetti Bolognese but you an omit it completely or add even more. If you aren’t sure how much red pepper to add, start with a pinch and add more to taste.

Description

An easy but super delicious recipe for spaghetti bolognese, packed with lots of vegetables and a great dish to get kids in the kitchen cooking.

Ingredients

  • 1/2 tbsp oil
  • 75 g smoked bacon, chopped
  • 1 onion, diced
  • 2 garlic, crushed
  • 2 carrots, chopped
  • 1 celery, chopped
  • 1 red pepper, chopped
  • 500 g beef mince
  • 1 tin chopped tomatoes
  • 200 ml beef stock
  • 100 ml red wine (or more stock)
  • 2 tbsp tomato puree
  • 1 tsp dried oregano

Instructions

  • Add the oil and bacon to a large frying pan and cook for a couple of minutes.
  • Add the onion, garlic, carrots, celery and red pepper and continue to cook for another 2-3 minutes until the veggies start to soften.
  • Add the mince and use a wooden spoon to break it up in the pan, frying until it has all browned.
  • Add the tinned tomatoes, beef stock, wine, tomato puree and oregano and bring to the boil.
  • Reduce to a high simmer and cook for 30 minutes until the vegetables are cooked and soft.
  • Serve with spaghetti and top with some grated cheese.

Notes

Leftovers can be cooled and kept in an airtight container in the fridge for up to 2 days. They can also be frozen and defrosted in the fridge overnight.

Melt butter with olive oil in a small skillet over medium-high heat. Cook and stir mushrooms in butter mixture until softened, 2 to 3 minutes. Add 1/4 cup red wine bring to a simmer, reduce heat to medium-low, and cook until the mushrooms are very dark and shrunken in size, about 20 minutes.

Heat a large pot over medium heat. Cook and stir ground beef, yellow onion, diced tomatoes, red bell pepper, green bell pepper, and garlic together until the beef is completely browned, about 10 minutes season with oregano, basil, and rosemary. Stir 3/4 cup red wine and tomato paste into the beef mixture. Pour spaghetti sauce into the pot stir. Return mixture to a simmer and continue cooking until the flavors blend, 10 to 30 minutes.
