is a lemon flavored biscuit that is eaten here in spain in the morning for coffee it is tasty and very fluffy


  • 150 gr sugar,
  • 50gr flour,
  • 50 gr starch,
  • 4 eggs + 2 egg whites,
  • peel and juice of a lemon,
  • baking powder,
  • a pinch of salt,
  • powdered sugar for decoration.

Method of preparation

Separate the yolks from the egg whites and rub together with the sugar until they turn white. Whisk the egg whites, sift the flour and mix with the starch, salt powder and baking powder and mix them. Add the yolks over the egg whites and mix lightly, then add the flour mixed with the starch in the rain. Add the grated lemon juice and peel and mix lightly. Put it in the tray lined with baking paper or as I did in the aluminum tray and greased with a little oil. My tray was smaller, I don't know the exact size, but it comes out taller if the tray is smaller. Bake at 170 degrees for 30 minutes and test with a toothpick.
