Caramelize 1 tablespoon of sugar, over which we add hot water and simmer until the sugar melts. Mix the rest of the sugar with cinnamon, ginger and nutmeg and put them in syrup. Stir until the sugar is completely dissolved, then remove from the heat and add 140 g of flour, stirring quickly. Let cool. The rest of the flour is mixed with baking soda and sifted over the cooled composition. add eggs, melted and cooled butter and grated orange peel. Knead until you get an elastic and non-sticky dough.
Sprinkle a little flour on the worktop, spread the dough and cut with the desired shapes. The children helped me. ;) Put in the tray lined with baking paper and put in the preheated oven 180 degrees and bake until lightly browned.
Optionally we can glaze both with glaze bought commercially and with glaze prepared at home. For the latter, mix the egg white until it hardens, gradually adding the powdered sugar. At the end put 2 tablespoons of hot water and vanilla extract. After icing the gingerbread, let it dry.
