Move over, avocado toast! This ricotta toast is a world of textures thanks to the creamy fresh cheese, thick cherry spread, and crunchy pistachios.


  • 1 cup frozen pitted cherries, thawed and halved
  • 1/2 teaspoon grated lemon rind
  • 1/2 teaspoon cornstarch
  • 3 tablespoons part-skim ricotta cheese
  • 1 (1-oz.) slice whole-grain bread, toasted
  • 2 teaspoons chopped pistachios

How to Make It

Step 1

Place cherries and rind in a microwave-safe bowl; sprinkle with cornstarch. Microwave at HIGH 3 minutes, stirring after 90 seconds. Cool 10 minutes.

Step 2

Spread ricotta over bread; top with 1/4 cup compote (reserve remaining compote for another use). Sprinkle with pistachios.
