This warm, comforting, and very satisfying porridge is more savory than sweet thanks to the quinoa. The apple and pecans bring a much needed sweetness to this bowl. If you don’t want to buy a whole package of quinoa, look for it in the bulk bin. This will hold well until the next day. Serve chilled or gently warmed in the microwave, if desired.
How to Make It
Place the quinoa, salt, and 3/4 cup of the milk in a small saucepan. Bring to a boil over medium. Reduce the heat to medium-low; cover and simmer until very tender, about 16 minutes. Remove from the heat. Let stand, covered, 3 minutes.
Stir in the cinnamon and remaining 1/4 cup milk. Top with the apple and pecans. Sprinkle with more cinnamon, if desired.
